Lecture 1 - Chilies This was the first lecture in a series of nine. The ingredient this week were chilies and we got introduced to many varieties of this vegetable that you normally don't find in grocery stores. Main focus during the lecture were demenstrations of various recipes with chillies. We got to taste breads, salsas, sambals, two chicken dishes and rellanos; all of them containing a varieties of chilies some spicier than others.The chilies that were used during class all came from the Chile Pepper Institute of New Mexico State University (visit their website). |
